Siboire Saint-Vallier

Québec – 2024

Founded in 2007 by two childhood friends, PO and D'Jo, the Siboire microbrewery quickly won over beer lovers. The first Siboire beer, brewed in 2004 by D'Jo in his apartment near the Université de Sherbrooke, marked the beginning of this adventure. The first Siboire opened its doors in Sherbrooke's former train station. Today, with over 300 beers to its credit, the microbrewery distributes its creations across Quebec, notably via specialty beer retailers (DBSQ).

The Siboire microbrewery inaugurated its new Quebec City branch on July 20, following several months of renovation work. Located in the heart of the Saint-Sauveur district, on rue Saint-Vallier, this opening allows local beer lovers to discover the authentic and warm Siboire experience.

We designed the layout plans, coordinated the worksite, and delivered and installed the equipment.

Sections worked on included the bar, where we installed furniture designed specifically to meet the customer's needs. In the kitchen, a central island was integrated, with a custom-made suspended shelf as a unique personalized feature. We also supplied shelving for the cold room.

For this achievement, we selected quality equipment from well-known brands, such as Centerline for refrigerators and preparation tables, while shelving solutions from Rosko and Thorinox guarantee great storage flexibility. Hatco warming stations provide uniform heat. We also opted for fryers from Frymaster and Pitco, combined with safe gas hoses from Dormont, and countertop grills from Vulcan. For cooking, the Combi Unox oven brings versatility and efficiency.

In plumbing, T&S taps were chosen for their robustness, while Kool-It and Resolute Ice Systems machines ensure refrigeration and ice production, with an advanced filtration system from Scotsman.

We also supplied all the crockery required.
