Sentier des cimes Laurentides
Mont-Blanc – 2022
The Sentier des cimes Laurentides is an ecotourism project located in Mont-Blanc close to the P’tit train du Nord linear park. Visitors can enjoy learning stations, a self-serve cafeteria-style restaurant with a terrace and outdoor bar, a treetop walkway, and the main attraction, a 40-metre observation tower. This is a stunning place to get your fill of nature.
For this breathtaking project, our team designed various areas of the restaurant Chez Émile: the service area equipped with islands dedicated to starters, drinks, desserts, and hot meals; the kitchen, which includes storage, preparation and cooking areas; and the dishwashing area.
A rather unusual concept for the province of Quebec: the food is exclusively cooked using two ovens and a Rational braising pan. The cafeteria-style restaurant has a dining room, but the concept is mainly centred around the terrace in the middle of the gardens of the old fish farm.
