Rôtisserie La Lune

The Rôtisserie La Lune marks a new chapter in Montreal’s dining scene, opening its doors in December 2024 in the Villeray neighborhood. This project stems from the vision of restaurateurs Marc-Olivier Frappier and Vanya Filipovic, already renowned for their restaurant Mon Lapin.
In a bright space where tables and a counter coexist, the Rôtisserie La Lune offers a reinterpretation of the traditional rotisserie concept. The menu celebrates poultry in all its forms, spotlighting chicken, duck, guinea fowl, and poultry liver. Special attention is paid to details, as evidenced by their signature chicken fat butter. The sides are equally impressive, with a thoughtfully curated selection of vegetables, salads, and appetizers that echo the refined spirit of Mon Lapin. Quality is ensured through partnerships with the same farms that have supplied Mon Lapin since its inception.
The wine list, crafted by Vanya Filipovic and Alex Landry, features a sharp selection of Quebecois and French wines at affordable prices. The establishment benefits from the expertise of a wine-passionate team, ensuring top-notch service and recommendations. To support this level of excellence, it was essential to create workspaces that match these ambitions.
With this in mind, our team recently completed the full outfitting of the Rôtisserie La Lune’s facilities, encompassing three key areas: the main kitchen, the bar, and the prep area. We were also tasked with the complete setup of the workspaces, including the pass-through and dishwashing station.
The kitchen space was meticulously designed with a stainless steel wall covering, ensuring durability and ease of maintenance. We installed a natural gas rotisserie with a stainless steel exterior finish, accompanied by single and double traditional chicken spits and their dedicated cart. Cooking equipment includes a six-burner natural gas Garland range, complemented by a countertop-mounted Crown Steam tilting braising pan with a lid.
For frying needs, two Rosko floor fryers (60 and 42 lbs) were installed, equipped with casters for optimal mobility. The refrigeration system includes multiple Centerline and New Air units, such as under-counter refrigerators with worktop surfaces and drawers, as well as True stainless steel freezers. Cooking equipment is rounded out by a countertop convection oven and a Hatco rotary toaster.
The dishwashing area was optimized with an L-shaped configuration, featuring a double Rosko stainless steel sink with a drainboard, a pre-rinse unit with hose and swivel spout, and a dedicated mop sink with a wall-mounted faucet. The storage system includes angled carts with seven aluminum shelves and various stainless steel wall shelves with tailored brackets.
For preparation and service, we installed Centerline worktables with lower shelves and backsplashes, maximizing workspace efficiency. A Brema ice machine completes the setup to meet the establishment’s ice needs.
The entire project included the delivery and professional installation of all equipment, ensuring seamless integration and optimal functionality. Every element was strategically selected and positioned to create an efficient and ergonomic workflow, enabling the Rôtisserie La Lune team to operate in ideal conditions.
The plumbing fixtures were carefully chosen, featuring multiple wall-mounted faucets with swivel and oscillating spouts tailored to the various work zones. Preparation and storage surfaces were maximized with the strategic installation of double upper shelves and versatile worktables.
