Le Piolet is a community organization that supports young people aged 16 to 35 by offering them adapted services to improve their quality of life, develop their skills and foster their social integration. Le Piolet's interventions include a young adults' home, transitional housing and cooking training.
The Resto-école is an integration enterprise that offers young people living on the margins of society hands-on training in cooking. By developing technical, personal and social skills, these young people prepare tasty dishes that reflect their progress. By ordering from Le Piolet, you support their journey towards self-sufficiency, while contributing to community initiatives such as the restaurant and the food security service. Always attentive to the needs of the community, Le Piolet stands out for its innovative commitment and its positive impact on future generations.
To support Resto-école's mission and the positive impact it generates in the community, we contributed specialized equipment and financial support to their socio-financing campaign. We also built the upstairs service kitchen and the production kitchen, providing young people and the organization with functional spaces adapted to their needs.
Le Piolet's customer area stands out for its contemporary, welcoming design. The dining room combines elegance and comfort, with custom-made banquettes and carefully arranged tables. The service counter, enhanced by a distinctive green wall tile, creates a warm, modern focal point. The lighting, with its suspended and recessed fixtures, helps create a convivial atmosphere, perfectly reflecting the establishment's inclusive mission.
Le Piolet boasts a state-of-the-art culinary infrastructure, organized into two distinct spaces to optimize production and service.
The service kitchen is designed to optimize efficiency and speed of execution. It is built around high-performance professional equipment: a 40-gallon Cleveland stationary kettle, a 30-gallon tilting skillet for the preparation of stocks, sauces and simmered dishes, and a Rational iCombi Pro oven equipped with an UltraVent Plus hood and a Vario Smoker system for remarkable versatility in daily preparations.
Organization and storage are structured by a complete Metromax shelving system. The layout features several stainless-steel workstations, including a specialized pastry table with wooden top and drawers. A GEMM blast chiller ensures efficient handling of hot preparations.
The production kitchen, the heart of the establishment, is designed for high-volume preparation and long-term cooking. It combines a latest-generation Frymaster frying system with integrated filtration, a six-burner Garland range with oven and salamander for minute cooking, and a complete set of holding and preservation equipment: retractable Hatco heating tables and lamps, True refrigeration units, including three-door under-counter refrigerators and glass beer coolers. The cold chain is guaranteed by a high-performance Brema ice machine. Ergonomics are at the heart of the layout, with preparation tables equipped with lower shelves, several wash stations including preparation sinks with professional T&S fittings, and a dedicated hand-washing sink with foot valve. A Sharp commercial microwave completes the package.
The spaces are equipped with high-performance ventilation systems and organized according to a logical workflow, from storage to service. The predominant use of stainless steel, combined with an elaborate system of wall-mounted and suspended shelving, maximizes space while complying with professional hygiene standards. The installation is completed by a professional plumbing system, integrated recycling bins and open storage cabinets, demonstrating attention to the smallest detail.
In addition to the supply of materials, the Piolet kitchens benefited from a complete support service, from delivery to installation. This global approach, including supervision of operations and coordination on site, ensures the quality and durability of the entire project.
