The Domaine du Baluchon eco-villégiature, located in northern Quebec, offers a unique experience where nature, relaxation, gastronomy and tradition harmoniously converge. Founded on the principles of sustainable development, this destination distinguishes itself with eco-friendly accommodations and activities focused on well-being and the discovery of nature. The concept of Le Baluchon Éco-plein air was conceived on October 26, 1982 by seven students passionate about adventure and nature, including biology student Louis Lessard and graphic design student Yves Savard, who brought their innovative vision to this inspiring project.

Le Baluchon is recognized for its quality culinary delights, distinguished by refined gastronomy. The establishment creates an authentic culinary experience by emphasizing regional flavors while integrating eco-responsible practices such as sustainable resource management and food waste reduction.
The Doyon Després team was asked to lead this ambitious project, taking charge of the detailed design and renovation of several key sections, including the main kitchen, the production kitchen, the bistro kitchen, as well as the auxiliary kitchen, the dishwashing area, the cold room, the bakery and the patisserie. We revamped all the kitchens in the building. Every aspect has been meticulously thought through to optimise the space available while guaranteeing optimum functionality.
In addition to the design, we successfully managed the delivery and installation of essential equipment for these critical divisions. Our contribution included the supply of custom-made equipment such as plate warmers, tables, a pass-through and Garland kitchen equipment, all specially adapted to the unique requirements of the project, combining quality, eco-responsibility, innovation, ergonomics and performance.
