Chef Frédéric Dufort offers a menu that celebrates the richness of Japanese cuisine. Gyozas, yakitoris, and karaage fried chicken rub shoulders with tatakis and ramens in a menu that combines traditional dishes and innovative creations.
The neon lights and lanterns, concrete and wooden walls, and sophisticated furniture create a perfect blend of contemporary aesthetics and traditional Japanese elements. You are invited to experience an extraordinary immersive experience in an enchanting nighttime atmosphere.
Our experts helped bring this vision to life, first by designing custom equipment for the pass-through, preparation counters, dishwashing area, and cabinets for dish storage. We provided equipment for the kitchens (including the cold room) and the bar: beer refrigerators, freezers, ice machines, sous-vide cooker, fryers, salad tables, and Chinese wok are just a few examples. Our team also installed all the equipment.
An interesting highlight of this project: since the restaurant is located in a shopping center and the equipment delivery was scheduled for December 22nd during the peak holiday shopping period, our team arrived at 5 a.m. It was important for our client that the delivery be completed before the stores opened at 9 a.m., and our experts demonstrated flexibility to meet this request.
