Since 2013, this chain of French brasseries has won the hearts of food lovers with its six locations spanning from Boucherville to Ottawa. Under the direction of Executive Chef Frédéric Dufort, Chez Lionel offers an authentic bistronomic experience that blends classic French brasserie dishes with bold creations.
From breakfast to dinner, every moment matters: refined evening menus, savory weekday lunches, and indulgent brunches. Not to mention a carefully curated wine list by their sommelier, featuring private imports that elevate every dish.
Behind this culinary success lies a commercial kitchen infrastructure that matches the chain’s ambitions. Our team recently completed the full setup of Chez Lionel’s professional kitchen, an ambitious project that perfectly showcases our expertise in commercial restaurant equipment.
The kitchen section is equipped with an impressive range of high-end appliances, including Vulcan and Garland cooking equipment renowned for their reliability. The installation includes a Garland 6-burner natural gas range, a Vulcan double natural gas convection oven, a 70-lb Vulcan fryer, as well as a griddle and a 36-inch salamander, all powered by natural gas for optimal performance.
The preparation area features top-quality New Air equipment, including specialized pizza and salad prep tables, as well as multiple undercounter and bar refrigeration units. Operational efficiency was maximized through the integration of diverse storage equipment: full-door bar refrigerators, Scotsman and Brema ice machines, a 54-bottle Eurodib wine cellar, and undercounter freezers. A 40-gallon Garland steam kettle enables high-volume production, while Omcan, Rosko, and Thorinox worktables provide sturdy and hygienic preparation surfaces.
The dishwashing section, largely equipped by Inox-Fab, seamlessly completes the setup with a professional dishwashing table, a bar sink with a cocktail section, a double pass-through, and a dish cabinet. The addition of Hatco double infrared warmers ensures dishes stay hot during service.
