Annette bar à vin is a wine bar with a vast selection of carefully selected wines that also offers cocktails and dishes made from local products. Many types of events are held here such as wine tastings, gourmet meals and also musical performances.
We did the entire design of the kitchen and bar and the development of custom furniture to meet the criteria of Chef Marc-André Jetté (Hoogan et Beaufort / Traiteur Marc-André / Boucherie Édouard et Léo). Like many restaurants, maximizing space was a priority. The space efficiency of the hot line, prep tables and pantry had to be carefully thought out to be optimal. Every inch is maximized as a work or storage surface. To prevent spills and for ease of cleaning, all furniture rests on insulated rectangular bases.
We designed a custom-made refrigerated island that is the cornerstone of this completely open kitchen and is observed by all. This item allows for increased refrigeration space and is large enough to accommodate 6 members of the kitchen brigade to comfortably carry out set-up and plate setting. The pass-through was done in conjunction with the LG2 Architecture team and is an uncommon black and green marble countertop.
On the bar side, the custom-made realizations (which are at a non-standard height) allow customers to observe every manipulation of the sommelier and bartender as they prepare the cocktails. This also allows a proximity between the service staff and the customers which facilitates the exchange and the complicity.
Being a wine bar, Annette has several choices of wine by the glass. In order to facilitate the service of these wines, we have integrated unique ice trays to two serving cabinets that allow the staff to have quick access to them without going back to the cellar.
