Thermometers are not simply used to figure out what is the internal temperature of the pieces of meat that are cooking on the cooking grids of the grill. It is a device that tells, according to what the reached temperature is, if the cooking is optimal and if the cook needs to perform some manoeuvrers to get the temperature at its right level.
