Piri Piri Chicken and Bacon Pizza Quesadilla
(for 1 quesadilla)
Ingredients
- 1 pizza dough ball (285g)
- 3 boneless chicken thighs
- 3-4 bacon strips
- 1/3 to 1/2 cup shredded cheese (50% sharp cheddar - 50% mozzarella)
- 150ml Doyon Després Piri Piri sauce
- 3-4 tbsp Doyon Després All-Purpose seasoning
- A drizzle of oil of choice
Preparation
- Evenly sprinkle the chicken thighs with Doyon Després All-Purpose seasoning.
- On a plancha preheated to medium heat, sear the chicken while cooking the bacon in parallel.
- Once the chicken is seared, cut each thigh into 4 to 5 pieces and add some Doyon Després Piri Piri sauce. Once absorbed, repeat the process to thoroughly infuse the chicken with flavor.
- When the chicken reaches an internal temperature of 185°F, set aside the chicken and bacon.
- Roll out and lightly stretch your dough to the edges. Keep some thickness, avoid over-stretching. You should have a disc of about 9 to 10 inches.
- Put a drizzle of oil on the cooking surface and sear the first side.
- When you get a nice color, flip and add the chicken, bacon, cheese, and a generous drizzle of Doyon Després Piri Piri sauce.
- Fold the dough over itself. Cook both sides and press lightly with a spatula to keep everything well sealed.
- Enjoy and make it again!
